Pancakes the healthy way

Pancakes are my favorite.  I could eat them for every meal.  The only problem is they aren't the healthiest (I mean they have the word cake right in them and you cover them with butter and syrup haha)



So I set out to find a healthier version.  I tried the kind where all it is is just bananas and eggs, but I wasn't a huge fan.  They just don't have the right texture.  Then I found this recipe on Pinterest.  It has  ground up outs in it so the texture is a lot more pancake like.  





Now obviously they aren't exactly like pancakes, but for a healthier version,  they are pretty darn close! They are my new favorite breakfast and I don't feel guilty after!  And another awesome plus is that Micah loves them.  And it's a good thing too because one recipe worth makes a lot and I can't finish them on my own.  



Healthy Banana Pancakes


1/2 Cup oats 

1/4 Cup applesauce

1 ripe banana 

2 eggs

1 tsp vanilla

1/2 tsp cinnamon 



Instructions 

Put oats a blender and blend till they resemble flour (but they will still be pretty chunky)  Then add the rest of the ingredients and blend.  Cook on a greased pan.  


I have tried lots of different things on top.  Honey, Yogurt, and fruit are my favorites.  Especially Greek Honey yogurt.  It's the best.
