Micah's Reading Corner

Micah loves books.  He has ever since he was old enough to turn the pages.  Before we moved here I would often find him in his room, sitting on the floor, flipping through the pages of a book over and over.  



Micah's Nana brought him a bunch of books for Christmas and I was so excited to find a way to show them all off.  I wanted a place where Micah could go and read to his heart's content.  So as we were getting Micah's room put together we set aside a little corner of it to be a dedicated reading corner.  It took a while to get it all set up, but I'm so happy with how it turned out! 


This shelf came with the house so we painted it the colors of Micah's room and I just love how it turned out!  


These little white shelves are possible my favorite thing.  I told Matt that I wanted something for books that would be more like displaying them instead of just storing them.  We looked online and found some at ikea that we thought would work pretty good, but then my husband, being the awesome creative guy that he is, had another idea. 


He built the shelves out of the old trim that we tore out of the house.  How cool is that?? 


The trim already had that little groove for the books to sit in and everything.  It worked out so good. 





We found this little chair at DI.  We put Micah in it to let him try it out at the store and he immediately leaned back like this haha 


I got new material to match his room and reupholstered it.  Not an easy task, but I'm glad I did it. 



I honestly didn't think he would care for the chair that much.  I figured he would still read his books on the floor, but no!  He loves his chair! He goes to the shelves to get a book and then sits down and reads it in his chair.  


It makes me so happy :)  I just love finding him in his room with all his books.  He loves his little corner!  



Fun Fact:  he still refuses to let us read him his books.  It's a miracle if you can make it all the way through a story before he grabs it from you and turns the pages himself haha  He loves to sit on our laps while he reads, but he will hardly ever let us turn the pages.  Love that kid :)

Homemade Blueberry Almond Granola

During college my roommate got me hooked on granola with honey greek yogurt... Ooohh it's so good.



I have been wanting to make some granola for a while now.. I finally got all the stuff together and then started looking for recipes.




I looked and looked, but I couldn't find a recipe that was just what I wanted.  So I decided you know what? I got this!  And I made up my own.

I'm pretty darn happy with the way it turned out! It has everything I wanted in it and since i used honey and coconut oil, it's pretty healthy too.


The perfect thing when I just really need something yummy :)





Blueberry Almond Granola

Dry Ingredients 

4 Cups old Fashion oats 

1 Cup Almond slivers 

1/2 Cup coconut 

1/2 Cup flaxseed (optional)

1 - 1 1/2 Cups dried blueberries

Wet Ingredients

1/4 Cup coconut oil

3/4 Cup honey


Instructions 

Combine all the dry ingredients except the dried blueberries.  In a small saucepan melt the coconut oil.  Next, stir in the honey with the coconut oil.  

Add the wet mixture to the dry and stir until all the oats are covered.  Bake on a parchment lined cookie sheet at 325 degrees for 30-40 minutes or until golden.  Make sure to take it out and stir it a couple of times as it cooks so all sides get evenly toasted. 

Once it's done cooking stir in the dried blueberries.





There you have it! So simple and as a bonus it smells SOO good while it cooks.  Just what we needed on this cold snowy day!

A weekend in Zion's

Alright so we weren't in Zion's the whole time..
In fact we spent more time out of the park then in it.

For President's day weekend we headed up 
to Southern Utah for a little vacation.

We planned to camp with my brother and his family,
but all the campsites were pretty much 
gone by the time we got there so we ended up camping
in my uncle's back yard.






It was super fun!
They had a fire pit and everything.























I don't know how thrilled Micah was at his daddy holding another baby ^^




The first day was Sunday so we went to church
and then hung out with family.








We also buried Micah in the sand 






The next day was spent at Zion's

My aunt and uncle and my cousin's family came with us
so we had a big group!

After the first hike we had some lunch and did a little 
playing in the river

unfortunately it basically crumbled.. 
but at least I got pictures. 





After changing out of wet cloths we headed to the next hike!

This one was really more of a stroll cause it was paved haha

Micah fell asleep in his pack so when we got to the end we laid him down for al little rest.

After all the hiking we went and swam where my uncle was staying
then he took us out to eat. 
It was a very, very good day.


We headed home on Tuesday. 
We were planning on doing a hike on the
way home, but it was super cold and windy!
The poor babies would have froze.
So we just meandered on home.

But Luke and Tonya followed us home so we did some more partying there


Some swimming and shopping were in order.



It was such a fabulous weekend (and week haha) 
packed with lots of family and fun!
