Cauliflower Crust Pizza

I had a break through today!!
I made Cauliflower crust pizza that actually turned out good!

So I just had to share :) 


I attempted this one other time and it didn't turn out so great, so I have never tried it again
Then I came along THIS recipe and it changed everything! 
She does a great job at breaking down all the steps and it worked :)

I think the key to enjoying a cauliflower crust pizza is to not compare it to real pizza
obviously it's not going to taste exactly like pizza! 
I mean it's made out of cauliflower.....

But it is SO good in it's own way! 
And healthier :)



Cauliflower Crust Pizza 

1 small to medium sized head of cauliflower

1/4 tsp salt 

1/2 tsp basil

1/2 tsp oregano

1/2 tsp garlic powder

1/4 cup parmesan cheese (I used the real stuff and grated it myself)

1/4 cup mozzarella cheese

1 egg 


So to begin with, wash your cauliflower and get it really dry
I washed it and then dried it with a paper towel 
as I broke it in pieces
Then you'll want to cut off most of the stems. .

If you have a food processor then awesome, but I don't 
so I used my blender and it worked great. 
Throw all your cauliflower pieces in your blender or food processor and 
pulse.  I really only pulsed like three or four times 
and it was done so it doesn't take too much 


It should look something like this..
  

You should get about 2-3 cups of the cauliflower rice 
I had closer to 4 cups but I only used 3

Now put your cauliflower rice in a microwave safe bowl (or bread pan haha) and cover it with
plastic wrap 


Put it in the microwave for 4 minutes. 

While your cauliflower is cooking put a pizza stone or a baking sheet in 
the over and preheat it to 450 degrees. 
I didn't have a pizza stone so I used a baking sheet and it turned out great! 

Also put some parchment paper on a cutting board and spray it with plenty of cooking spray

Once the cauliflower is done dump it out on a towel


She said to use a tea towel, but I don't have one so I just chose my thinnest towel and it worked good.

Let your cauliflower cool down for a little bit 
Once its cool enough to handle, wrap it in the towel and wring all the 
water out of it that you can 


Don't go lightly on this step!!
Really get ALL of the moisture out that is possible 

Then you'll have this..

Put the cooked and wrung out cauliflower in a bowl along with 

1/4 tsp salt 

1/2 tsp basil

1/2 tsp oregano

1/2 tsp garlic powder

1/4 cup parmesan cheese (I used the real stuff and grated it myself)

1/4 cup mozzarella cheese

1 egg 



Get in there and mix it all up with your hands!

Now dump it out onto your sprayed parchment sheet and shape it 
make sure to press it down really good so that it gets all formed together. 


Now slide the crust off of your cutting board and onto the baking sheet that has been in the oven (your parchment sheet will go into the oven with the crust, maybe it's just me, but I always wonder if parchment paper should be going into the oven.. but don't worry it turns out fine haha) 

Bake for 8-11 minutes or until it starts to brown and look similar to this..



Now all that's left is your toppings!!
I just did sauce and cheese this time, but I think 
next time I would do some spinach and maybe some other veggies

Put your toppings on and put it back in the over for another 5-7 minutes


And there you have it!
A delicious and healthy alternative to pizza :)




I think I might go and have some more now :)
